Comgroup - Tender-Formâ
Tender-Formâ gives a texture as tender as Mum's homemade patties.

The homemade goodness of a tender burger begins with old-fashioned basics. Cubes of lean beef were carefully fed through mum's hand-cranked meat grinder. She gently formed the loosely ground, fluffy patties. When placed in the pan, the patties cooked quickly. The fluffiness of the patties created small air passages between the strands of loosely woven beef which insured a tender texture. When served, only one bite was needed to confirm that the making of a tender hamburger began with the homemade goodness of mum.

The Tender-Formâ process:

After the raw material passes through the normal size reduction and blending process, it is brought to the forming machine. The meat product is then gently conveyed to the pump box of the forming machine.

At that point, a controllable on/off gentle pressure urges the meat up through the Tender-Form â fill plate. This fill plate has a large number of small holes similar to those of a grinder plate. Immediately above the fill plate is the mold plate. The cavities in the mold plate collect and hold these strands of meat in a vertical position as opposed to a horizontal position.

The resultant patty is made up of a series of vertical columns of meat. It is the small spaces between these vertical columns that give the patty a fluffy and tender texture. These small spaces also allow heat to enter and cook the patty faster.

Tender-Form â . The natural approach to forming which creates faster cooking, increased yields, more efficient freezing, and a tender, more fluffy burger. As natural as mum's homemade patties.
